Today I am going to share with you one of my favorite soup recipes,
Hamburger Soup.
I love this recipe because it is so easy and most of the ingredients you probably already have on hand.
Here are the things I use to make my soup:
- 1-1/2 lbs of hamburger
- 1 large box or can of beef broth
- Bag of mixed veggies (any variety-your choice
- Two potatoes (sliced and diced)
- 1 reg size can of diced tomatoes (I chose fire roasted to add a hearty flavor)
- Half of a yellow onion (not shown)
- Salt & Pepper
Just brown your hamburger in a med size pan then drain the grease and pour hamburger into large soup/stock pot.
Next, pour in your beef broth with approximately four cups of water. Add more water to get the consistency you're looking for.
Keep in mind potatoes and veggies soak up the broth so if you add a lot of stuff to the soup mixture you may need to add more water or broth.

That is simply based on preference but I used four cups of water and one large container of broth.
Now add your vegetables, diced potatoes, and sliced/diced onion.
Then stir in your jar of diced tomatoes.
I chose fire roasted because it gives the soup a beefy/smoked flavor that we really like.
Add a dash of salt and pepper to taste and bring mixture to a low boil.
Let soup simmer for about an hour.
After about an hour your potatoes and veggies will have softened and soaked up the flavor of the broth.

And now your soup is ready to serve!
This soup pairs nicely with a side of biscuits, garlic bread, corn bread muffins, pumpkin bread, or crackers.
So the next time you are stuck with a pound of hamburger and need to come up with something different for dinner, give this recipe a try.
It is easy to make and because it contains basic vegetables like potatoes, corn, and carrots, it is something that will please your picky eaters!
